Peanut Butter Cup Stuffed Ginger Cookies
We don’t do a lot of baking around here, but when I read the name of these cookies in the latest issue of EveryDay with Rachael Ray (and happened to have almost every ingredient on hand) – I took it as a sign. Plus it was a chance for me and my lovely assistant to take our new big work surface (Sir Peninsula) for a spin.


They’re basically a ginger cookie that’s wrapped around a Reese’s Peanut Butter Cup Miniature. The cookies turned out pretty good. A bit on the dry side alone, but perfection when dunked in milk. Clara gives them two flour covered thumbs up.

Yesterday, I made white chocolate, cherry and oatmeal cookies along with traditional Christmas sugar cookies for my office.
We are trying the Trader Joe’s gingerbread mix this year to make cookies. We’ll glaze them with a lemon sugar glaze. We love a good gingerbread at Christmas!
We are also making our traditional White-Chocolate-Cranberry-&-Amaretto cookies this year, by popular demand. I get so many requests for the recipe that I typed it up so I can just print or email when asked for it. I wish I could post a link to this recipe, but I can’t remember where I found it several years ago. They are fantastic cookies!

I made sugar spirals, frosted butter cookies, Rudolph gingerbreads, chewy mint brownie cookies, mint marshmallow brownies, and 2 batches of Christmas crack (sweet chex mix) — one peppermint and one dark chocolate and peanut. Around 600 cookies so far.
And that was just for round 1! :) I love this time of year, and my 19 month old is my best baking assistant! Except for the other day with the sugar spirals…she knocked over the bottle of red food coloring, and it looked like Dexter had been baking in our kitchen…

I was cracking up thinking that you had molasses on hand but then re-read “almost every ingredient.” Ha! They look delish, and even better than the picture of Ms. Rachel Ray’s version if I do say so myself…
You can start your laughing again, because we did have molasses on hand – I think from a past cookie baking adventure, actually. Apparently it’s the only thing we use molasses for.
I think the ingredients we were missing were the peanut butter cups and I was a little short on butter.

I actually recently made some “stuffed” cookies myself. I tried out the “Oreo Stuffed Chocolate Chip Cookies” that have been floating around on Pinterest. Same concept as what you made, but just wrapping chocolate chip cookie dough around oreos. Talk about over-indulgence! ;) They were amazing!

I made Rachael’s Coconut Snowflakes this weekend and they were PURE heaven!!!! I truly recommend! Instead of stuffing 2 cookies with icing (my snowflakes were HUGE), I iced the tops and sprinkled coconut on top. Love Rachaels mag!!!

If I didn’t love you guys SO much, this phrase “but when I read the name of these cookies in the latest issue of EveryDay with Rachael Ray” could have totally caused John to lose his mancard. :-) Love the blog though, so he can keep it primarily because of the cabinet door magic that he worked.

I have been baking a lot lately! I just bought myself a kitchenaid stand mixer (YAY!) and am happy to use it. I usually just make banana bread or choc chip cookies but recently I took a class with Joy from joythebaker.com and we learned how to make Buche de Noel. It is soooo yummy but it is a lot of work. Even with all the work I’ve made it two more times since the class and it’s always a big hit!

I made the same cookies on Saturday! Took them to my church’s cookie exchange and they were quite the hit. Unfortunately, now there’s no left for me! :(

I made oreo cookie balls (kraft website.) they were great!!
I have also made what I call pretzel treats – place several bitesized pretzels on a baking sheet (have to be shaped, not sticks.) Top with a Wilton white chocolate candy melt. broil for 1 minute or until candy is soft but not brown. Once out of the oven, top with a peanut m&m and let cool.
Love those pretzel treats! My mom sometimes makes them. Mmmmm….

I made some yummy lemon sugar blueberry muffins this past week. I found the recipe on Pinterest and it turned out wonderful. I’m a bakers daughter so I love to bake and find different things to make. Can’t wait to have a little bean of my own to share the same joy.

Those look good! My six year old daughter and I made gingerbread dough (to be made into cutouts later this week), haystacks and rice crispy treats on Sunday. We also baked up some chocolate chip cookies last week. Baking with children is so much fun!
I was busy this weekend making our fave Christmas cookies too. I made White chocolate chunk, cranberry oatmeal cookies, butter pecan cookies, peanut butter balls and oreo truffles! A couple of days before Christmas we’ll make sugar cookies and ice and decorate those for Santa. So much fun!

I was baking from Friday night through Sunday night, about 800 cookies later, I have a very happy department at work. But that’s nothing compared to the 30 varieties, and thousands of cookies my grandma makes. “just the favorites” she says. I don’t have family here so I don’t do it for any other reason other than tradition. Ahhhh the holidays.

Hungry Girl has this amazing cupcake recipe you might want to try. Just TWO ingredients. It is hard to believe, but it comes out perfect and oh so moist. It’s almost dense – like a cross breed of a brownie and cake.
- one box chocolate cake mix
- one can pumpkin puree (no added seasoning)
It makes 12 large cupcakes. I bought Duncan Heinz Devil’s Food, 4 boxes for $5 at Jewel. One can of pumpkin is less than $2. So about $3 dollars for 12 cupcakes… or 25 cents per cupcake… not bad!
Directions:
Mix until well blended and follow box directions for baking. These cupcakes are the bomb. The cake still rises and forms a nice muffin top. It’s wholesome and guilt free. About two hundred calories. I also tried these as mini muffins (shorten cooking time) and dipped them in chocolate (the kind that hardens for dipped fruit). They were a hit! Rest assured no one will know they have pumpkin in them. You can’t taste it at all.
My new favorite stand by.

You probably already tried the “3-ingrediant” pumpkin bread from Katie Bower’s post, BUT what’s better than bread? COOKIES! I just made “3-ingrediant” pumpkin chocolate chip cookies. The best part was making them with our little man. Just 1 can pumpkin puree, 1 box spice cake mix, and a bag of chocolate chips…or in our case 2 partial bags ;) My baby boy had so much fun helping mix and it was pretty safe since there is no egg. And they were yummy! It only makes a couple dozen. Oh yeah, bake at 350F for 13-15 minutes. Then let them sit on the sheets for another 5 min. Delish! Happy baking…and happy holidays!

We made these peanut butter cup stuffed ginger cookies as well! They were very tasty, but I agree – they came out a little on the dry side. I thought they’d be a lot chewier, less crumbly. Oh well, it’s a tasty recipe! The ginger cookie batter was on the mild side (flavor-wise), which was good for some non-ginger lovers at family events this season. Thanks for sharing!
